2 cups fresh raspberries, plus more for garnish
3/4 cup granulated sugar
4 large lemons, juiced (about 2/3 cup)
3 cups water, divided
1 (750 mL) bottle club soda
fresh mint sprigs, for garnish
Directions
  1. In a blender, add the raspberries, sugar, lemon juice and 1 cup of water. Puree until smooth. Pour through a fine-mesh strainer into a pitcher. Discard seeds and pulp. Add remaining water, and top with club soda. Serve over ice with additional raspberries and fresh mint in each glass.
